Pre-fermentation maceration at controlled temperature in stainless steel, alcoholic fermentation with selected yeast and post maceration at the end of AF.
Aged for 15 months in French & American oak barrels. Tuning in bottle for 21 months.
Cherry red color and raspberry trim , on the nose you can see hibiscus, raspberry, cloves , cocoa , black pepper, red currant , balsamic notes and leather , in the mouth there are hints of plum, licorice, chocolate, spices, coffee and caramel; with soft tannins, good aftertaste and final structure.
It is recommended to pair with mole and adobes. Service: 16 to 18 ° C
